Creamy Garlic Dressed Salad with Salmon

Get your Vitamin D on with this creamy garlic salad topped with Salmon.

Back in the day eating healthy was simple, all you had to do was remove all the unhealthy stuff or most of it at least. They said, reduce your sugar intake, cut down on the takeaways, basically, you had stop eating everything that’s nice. Today, however, we know it’s a bit more than just that. We have to incorporate very specific types of foods and ingredients into our diets on a regular basis in order to protect our mental and physical health.

Our recipe for today’s TastyTuesday is packed with much-needed Vitamin D which is great for your mental health, and the leafy greens on the side for that added nutrients. Enjoy….

INGREDIENTS
 450 g salmon fillet
 ½ cup low-fat plain yogurt
 ¼ cup mayonnaise
 2 tbsp lemon juice
 2 tbsp grated Parmesan cheese
 1 tbsp finely chopped fresh parsley
 1 tbsp snipped fresh chives
 1 tsp soy sauce
 1 medium clove garlic, minced
 ¼ tsp ground pepper
 8 cups chopped curly kale
 2 cups chopped broccoli
 2 cups chopped red cabbage
 2 cups finely diced carrots
 ½ cup sunflower seeds, toasted

Arrange a rack in the upper third of the oven. Preheat broiler to high and line a baking sheet with foil.

Place salmon on the prepared baking sheet, skin-side down. Broil, rotating the pan from front to back once, until the salmon is opaque in the center, 8 to 12 minutes, then cut into 4 portions.

Whisk the yogurt, mayonnaise, lemon juice, Parmesan, parsley, chives, soy sauce, garlic and pepper in a small bowl.

Combine the kale, broccoli, cabbage, carrots and sunflower seeds in a large bowl. Add ¾ cup of the dressing and toss to coat. Divide the salad among 4 dinner plates and top each with a piece of salmon and about 1 tablespoon of the remaining dressing.
