Lamb Potjiekos Recipe

As promised, here is your third recipe for the month...

When you not so sure what to cook but want to really impress your lady? Why not try out this delicious lamb potjie recipe. It’s easy and no need for long unnecessary directions and complicated ingredients. Go spoil your lady.

INGREDIENTS
 Enough oil to cover the base of your potjie
 1 kg Lamb (don't de-bone)
 2 onions, chopped
 chunks of Potatoes, Carrots, Baby marrows, Green Beans, Mushrooms
 2 tbsp Ginger and Garlic paste
 salt and black pepper for taste
 400 g can of diced Tomatoes
 some bay leaves

DIRECTIONS

Once your coals are ready, place the pot on the fire and heat the oil.

Next, add your onions and fry them until they soft and translucent.

Add the lamb, ginger, garlic paste and brown on all sides. If your fire is to hot and your meat is burning add a few tots of wine or water. (not to much)

Add your salt and black pepper, mix nicely.

When the meat is brown, add the diced tomatoes and bay leaves.

Now you can put the lid on and let simmer for about an 1 hour or so.

Add the potatoes and the carrots first and cook for about 30-40 minutes before adding the baby marrows, green beans and mushrooms.

Remember to taste and add a bit more salt or black pepper if needed.

Don’t stir the pot to much, but gently shake to ensure that there is enough liquid in the bottom and that it’s not burning. If unsure, add a bit more wine or water should you need too.

Replace the lid and simmer for another 20-30 minutes

Taste one last time, if you happy remove the pot from the fire and serve hot with rice or pad and enjoy.
